Mushroom and Pepper Chicken

Ingredients

  • 3 lbs boneless skinless chicken breast cubed
  • 3 Tbsp olive oil
  • 1 medium onion
  • 1 green bell pepper
  • 1/2 pound sliced mushrooms
  • 3 cloves of garlic minced or pressed
  • 16 oz. can diced tomatoes
  • 8 oz. can tomato sauce
  • 1 tsp dried oregano
  • salt and papper

Instructions

  • Season Chicken with salt and pepper
  • Combine all ingredients in a large skillet
  • Cook over medium heat until it starts to boil
  • Reduce heat, cover and simmer for about 30 minutes.
