Slow Cooker Pot Roast with Carrots

Ingredients

  • 2 lbs. chuck roast
  • 3 Carrots chopped into bite-sized chunks
  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a small bowl, mix spices.
  • Combine spices with all other ingredients in the slow cooker.
  • Cook on low for 8-10 hours.
  • Shred.
