    Roast Chicken with Lemon & Thyme

    Serves: 6
    • 1 whole raosting chicken, about 4-5 lbs.
    • 2 lemons
    • 1 medium onion, quartered
    • 1 stick of butter
    • 1 Tbsp kosher salt
    • 1 tsp black pepper
    • 1 Tbsp dried thyme
    1. Rinse the chicken and remove giblets.
    2. Scrape some zest from the lemons.
    3. Mix salt, pepper, lemon zest and thyme in a bowl with the butter and rub all over the chicken.
    4. Slice the lemons and the onion in half and squeeze one of the lemons over the chicken.
    5. Place the lemons and onions inside the bird.
    6. Bake at 400 for an hour and a half or until done.
