Loaded Baked Potato Soup Recipe

This weeks Cooking with the FREE & Cheap Recipes is Loaded Baked Potato Soup.

Here on ‘I am THAT lady’ I want to show you that you can cook inexpensive and healthy meals for under $10.  The prices were taken from my local grocery store but you should find comparable prices at your local store, you can print this recipe by hitting the print icon on the bottom of this post.

Loaded Baked Potato Soup

Ingredients:

  • 7 cups milk (this is just shy of a half gallon) – cost about $1.00
  • 12 slices of bacon – cost $3.50
  • 4 large baked potatoes, cooked, peeled and cubed – cost about $1.00
  • 2/3 cup butter – cost $0.75
  • 2/3 cup flour
  • 4 green onions chopped- cost $0.25
  • 1 cup sour cream – cost $1.00
  • 1 tsp salt
  • 2 tsp pepper
  • 1 cup shredded cheddar cheese – Aldi cost $0.90

Directions:

  1. Melt butter in a large dutch oven over medium heat.
  2. Add flour and whisk until combined.
  3. Slowly add milk, whisking until thickened.
  4. Stir in potatoes and onions and bring to a boil.  Stirring frequently.
  5. Turn heat to low and simmer for about 10 minutes.
  6. Mix in bacon, sour cream, cheese, salt, and pepper.  Heat until cheese is melted.
