My kids are going back to school on Wednesday (YAY!) and I usually make a special snack for them when they get home from school that first day. I am trying to plan ahead this year so I started to think about high protein low fat snacks that would fill them up, but not have a ton of sugar. I decided to go to Price Chopper Supermarket for some inspiration, of course I had to bring my daughter Hannah with me for help (and also because she loves the little shopping carts).

I saw that Honey Nut Cheerios were on sale for $1.77 per box this week, and I had a coupon to make them only $0.77 per box!!! This gave me an idea for some sort of snack bites, but I needed another item besides Peanut Butter to add as a filler to keep them together.
I swung by the Dairy Aisle to pick up some yogurt and realized that I could get Yoplait Greek Yogurt for only $0.60 per cup with a coupon, this would be the perfect binder for my bites!
Inspired, I came home ready to create a recipe for Honey-Nut Protein Bites. These will be the perfect after school snacks for them!
Here is how you make them (Recipe adapted from 5DollarDinners.com)
1.) Measure out 3 cups of Honey Nut Cheerios. Place in ziploc bag and break them into crumbs with a rolling pin or spoon. This will bring them down to about 2 cups.
2.) Combine Cheerios in a large bowl and add 1 cup of unsweetened coconut.
3.) Add in 2 Tbsp of Yoplait Greek Yogurt.
4.) Add 2/3 of a cup natural peanut butter (I used crunchy this time for extra protein).
5.) Add 1/4 cup of honey.
6.) Add in 1 cup of mini chocolate chips.
7.) Stir together and roll into small balls.
8.) Refrigerate for at least 1 hour.
9.) Serve to hungry children when they get home from school.
