White Bean and Ham Soup

People who don't like soup love this. I'm not joking. It's universally loved by all hungry people.
Serves: 8 servings
  • 1 pound white beans, rinsed and soaked overnight
  • 1 pound ham, diced
  • 1/2 onion, diced
  • 1 cup carrots, diced
  • 1 stalk celery
  • 1 tablespoon dried thyme
  • 8 cups water
  • 4 cubes beef or vegetable bouillon
  1. Combine all the ingredients into a large stock pot.
  2. Bring to a boil and reduce heat to simmer.
  3. Simmer 1 hour or until beans are tender.
  4. Enjoy!
If you prefer a creamier soup, then you can accomplish that without any extra ingredients.

When the soup is fully cooked, simply remove 4 cups of the soup to a food processor or blender. (Make sure your appliances were meant to be used with hot liquids before using them in this step.) Blend the soup until smooth and then stir it back into the larger pot. This will easily create a creamy texture with no added ingredients!
