Ingredients
  • 1 pound boneless, skinless chicken thighs (3 - 4 thighs)
  • 2 mangos, peeled and chopped
  • 1/2 red onion, diced
  • juice from 1 lemon
  • juice from 1 lime
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chipotle chili powder
  • dash salt
Instructions
  1. Combine all ingredients in the slow cooker.
  2. Cook on high for 4 - 6 hours.
  3. Serve over rice.
