Slow Cooker Pollo Asado

Delicious, tender chicken in a citrus marinade!

Serves: 4 servings
  • 1 pound boneless skinless chicken thighs
  • 1/4 teaspoon crushed red pepper
  • 1 tsp oregano
  • 2 tsp ground cumin
  • 2 teaspoons garlic powder
  • 1 tablespoon cilantro, dried
  • 1/2 onion, chopped
  • 2 tablespoons olive oil
  • juice from one orange
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  1. Place the chicken thighs into the slow cooker.
  2. Top with crushed red pepper, oregano, cumin, garlic powder, cilantro, and onions.
  3. Over the top, pour the oil and juices.
  4. Cook on hight for 4 hours.
  5. Serve chicken sliced with corn tortillas, salsa, cheese, and guacamole (optional).
  6. To prepare this meal for the freezer, place all ingredients in a gallon freezer bag. Thaw the night before in the refrigerator. Cook as directed above.
