Easy Greek Roasted Chicken

Ingredients
  • 1 1/2 lbs. chicken (white or dark meat)
  • 1 red pepper, sliced
  • 2 lemons, halved
  • 5 mini-portobello mushrooms, halved or quartered
  • 1/2 onion, sliced
  • 1 tsp oregano
  • 2 Tbsp olive oil
  • salt
  • pepper
Instructions
  1. Preheat over to 400.
  2. Season the chicken with salt and pepper.
  3. Rub about 1 tsp of the olive oil on the bottom of baking or casserole dish
  4. Place the chicken evenly on the bottom, followed by the pepper, onion and mushrooms.
  5. Pour the remaining olive oil over the chicken and vegetables.
  6. Squeeze the juice over the dish, and then add the lemons.
  7. Bake as follows: For boneless, skinless chicken breast - 30 minutes, for bone-in chicken breast - 45 minutes, for drumsticks, thighs or leg quarters - 45 minutes to an hour.
