Spinach Fritatta

Serves: 4
  • 9 eggs
  • 1/2 brick of Cheddar Cheese (around 4 ounces)
  • 1/2 package of Fresh Organic Spinach (around 2.5 ounces)
  • Salt and Pepper
  • 2 Tbsp milk
  • 1/4 cup of onions
  1. Heat oil in a 10-inch oven proof pan.
  2. Sauté spinach and onions along with the salt for 5 minutes, or until softened.
  3. In a bowl, lightly beat eggs with milk and pepper.
  4. Pour in eggs and cook until almost done. Do not stir.
  5. Sprinkle cheese on top and put in broiler until brown and melted.
