Cilantro Lime Chicken with Spicy Grilled Corn Recipe

Using just Cilantro and Lime you can make this delicious and easy chicken recipe.

This is a favorite recipe of ours called Cilantro Lime Chicken. We serve it with rice and Spicy Grilled Corn.

Cilantro Lime Chicken with Spicy Grilled Corn

Chicken Ingredients

  • 2 lbs boneless chicken breast – cost $3.98
  • Zest and juice from one lime – cost $0.50
  • 2 cloves of minced garlic
  • 1 tablespoon fresh cilantro, chopped- FREE from the garden
  • 1 tablespoon olive oil
  • Salt and pepper to season

 Directions:

  1. In a large dish or ziploc bag combine the marinade ingredients and add the chicken.
  2. Let marinate for 4-6 hours.
  3. Grill the chicken over medium heat, until juices run clear.

Spicy grilled corn:

  • 6 ears of corn- cost $1.50
  • 1/3 cup olive oil
  • 2 teaspoons minced garlic
  • salt
  • pepper
  • cayenne pepper

 Directions:

  1. In a small bowl combine olive oil and minced garlic.
  2. Place the husked ear of corn on a piece of aluminum foil and brush the oil/garlic mixture over the corn.
  3. Sprinkle with salt, pepper and the cayenne pepper depending on personal taste.
  4. Wrap up the corn and grill over medium heat for 15-20 minutes turning half way through.

Add a side of steamed rice to complete your meal.(cost about $0.50)

Total Price = $6.48
