Chicken Fajitas

Ingredients

  • 2 Chicken breasts
  • 1 Red orange or yellow pepper, sliced
  • 1 onion sliced
  • 1 tsp olive oil
  • Flour tortillas
  • Kosher salt
  • 1/2 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp sugar
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp flour
  • 1/4 cup water

Instructions

  • Lightly season chicken with kosher salt, and cut into small strips.
  • Heal olive oil over medium heat in a large pan.
  • Cook the pepper and onions until slightly browned and tender.
  • Add the chicken and cook until done - then drain excess liquid.
  • Combine all spices except for the flour, and add to the chicken, peppers and onion as needed. You will probably not need all of the seasoning.
  • In a cup, combine the flour and water and whisk together.
  • Slowly add the slurry to the chicken in the pan. Heat until the liquid starts to bubble and thicken and mix with the chicken, peppers and onion.
  • Serve in tortillas with rice and top with whatever you'd like!
