Chicken Fajitas

  • 2 Chicken breasts
  • 1 Red, orange or yellow pepper, sliced
  • 1 onion, sliced
  • 1 tsp olive oil
  • Flour tortillas
  • Kosher salt
  • 1/2 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp sugar
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp flour
  • 1/4 cup water
  1. Lightly season chicken with kosher salt, and cut into small strips.
  2. Heal olive oil over medium heat in a large pan.
  3. Cook the pepper and onions until slightly browned and tender.
  4. Add the chicken and cook until done - then drain excess liquid.
  5. Combine all spices except for the flour, and add to the chicken, peppers and onion as needed. You will probably not need all of the seasoning.
  6. In a cup, combine the flour and water and whisk together.
  7. Slowly add the slurry to the chicken in the pan. Heat until the liquid starts to bubble and thicken and mix with the chicken, peppers and onion.
  8. Serve in tortillas with rice and top with whatever you'd like!
