    This weeks Cooking with the FREE & Cheap Recipes is Buffalo Chicken Taquitos.

    Here on ‘I am THAT lady’ I want to show you that you can cook inexpensive and healthy meals for under $10.  The prices were taken from my local grocery store but you should find comparable prices at your local store, you can print this recipe by hitting the print icon on the bottom of this post.

    Buffalo Chicken Taquitos

    Ingredients:

    • 2.5 lb of chicken, cooked and shredded or cubed – $1.79/lb at local deli – cost $4.48
    • 12 soft taco, flour tortillas *you can also use corn tortillas to make this gluten free) – 20ct from Aldi $1.69, cost – $1.01
    • 2 cups mozzarella cheese – cost $1.79
    • 4 oz.  cream cheese – Price Chopper cream cheese $1.00 for 8 oz. with this coupon.  Cost $0.50
    • 1/3 cup hot sauce – cost about $0.35
    • 1/3 cup milk
    • 2 tbsp butter
    • ½ tsp salt
    • ½ tsp pepper
    • 1 tsp garlic powder
    • Canola oil
    • Blue Cheese or Ranch (optional)

    Directions:

    1. Preheat oven to 425 degrees
    2. In a small sauce pan, melt butter over medium heat
    3. Add salt, pepper, and garlic powder.  Stir.
    4. Add cream cheese and stir until melted.
    5. Whisk in hot sauce and milk and simmer for 5 minutes, stirring occasionally.
    6. Toss the chicken with the hot sauce mixture.
    7. Spoon about ¼ cup of the chicken mixture into each tortilla and sprinkle cheese over top.
    8. Roll up the taquitos and place on a greased baking sheet.  Secure with a toothpick if necessary.
    9. Bake for 15 minutes.
    10. Serve with blue cheese or ranch if desired.

    Total:  $7.78
