Are you looking for a simple and easy recipe for dinner? Here is a super easy roasted red pepper chicken recipe! I love to cook simple and easy dinners, because let’s face it…I have 6 children running around the house and focusing on anything that takes longer is too stressful!
Here is a recipe that I created that includes only 4 ingredients, is healthy, and takes only 20 minutes from start to finish! The cost should be under $10.00 for the entire meal too!
This would be the perfect recipe for a busy night and you could make this faster than you could get a pizza delivered to your house!
4 Ingredient Roasted Red Pepper Chicken
Ingredients
- 1 - 1.5 lbs. of Boneless Skinless Chicken Breast
- Fresh Spinach
- 1 Red Pepper
- Mozzarella Cheese
Instructions
- Preheat oven to 400 degrees.
- Cut Red Pepper in quarters and take out the seeds.
- Place quartered pepper on a baking dish and coat with olive oil, salt, and pepper
- Place in preheated oven for 15 minutes. Flip over halfway through.
- While the peppers are cooking, heat up a pan on your stovetop with olive oil.
- Pound thin with Meat Tenderizer.
- Season 1 lb of chicken with salt and pepper.
- Cook chicken on medium high heat for 3 minutes on each side or until no longer pink.
- Top with Spinach, Mozzarella Cheese, and Roasted Red Pepper.
- Bake the Chicken at 400 until cheese is melted (around 5 minutes)
